Mango Ice cream !

I was very much impressed by SriPriya’s way of preparing mango ice cream. From the day I saw the mango ice cream in her blog, I wanted to try it out! Finally I got a chance to do it. The taste was too gud. Blogging has helped me to learn so many new recipes, ideas and much more. Thanks to all my friends.

Mango Ice Cream

Mango Ice Cream : I was too busy tasting the ice cream, that I forgot to take a snap... it almost started melting :D

Ingredients:

Fresh mango (Mango pulp can also be used): one
Condensed milk: 100 ml
Whipped cream: 250 gm

Preparation Method:

  • Mix all the ingredients.
  • Blend it in a mixer and freeze it.
  • After an hour, blend the frozen ice and again set it in the freezer.
  • Repeat this for 2 -3 times and then deep freeze the ice cream.
  • Garnish with mint leaves and serve chill.

My mom loves ice creams. Mango flavor is her favorite! Am sending this Mango ice cream to Shama’s Mom’s most favorite recipe event :)

Ice creams are our all time favorite… still they are so special now… why?? They are a gr8 treat in hot summer months! (technically its spring here in US :D ) My mango ice cream also makes its way to Priti’s Summer treat event :)

Mango ice cream has made its entry to 3 super events (oru kallu le 3 manga pole… oru mango recipe for 3 events :D ) Hope it qualifies in all the events :)

Godhumai maavu vazhai elai adai | Wheat flour adai

Godhumai maavu (Wheat flour) vazhai elai (plantain leaf) adai recipe comes from my mom’s kitchen :) Recently my mom had seen a cookery show in Vijay TV. She was so much impressed by this easy recipe that she tried it immediately and sent to me to be shared with all my readers :) (Thanks mom…so sweet of u!) Am posting this recipe as narrated by my mom.

Vazhai elai Godhumai adai | Wheat flour sweet adai

Am sending this recipe to Srivalli’s “Mithai mela” event!

Ingredients
Godhumai maavu (wheat flour): 1 cup
Jaggery: 1 cup
Coconut (grated): 1 cup
Elachi (Cardamom) powder: 1/2 tsp
Vazhai elai (plantain leaf) : one
Cashewnuts: few
Milk: sufficient amount to prepare the dough
Ghee: little (for greasing the plantain leaf)

Preparation method

  • Mix wheat flour, grated coconut, jaggery and elachi powder.
  • Add adequate amount of milk and make a soft dough.
  • Make small balls out of this dough.
  • Cut the vazhai elai (plantain leaf) into small square pieces.
  • Take one piece of vazhai elai, apply ghee on it.
  • Spread the dough ball on this greased vazhai elai.
  • Place one or two cashews on it and close it with another greased vazhai elai.
  • Similarly spread all balls on the greased vazhai elai.
  • Place all these on idly plate and steam cook it for 4-5mins.
  • Godhumai maavu vazhai elai adai is ready.

As the dish is steam cooked with vazhai elai it is very good for health and also will be very yummy.

Puliogare Mix | Pulikachal

After posting series of sweet recipes, today am here with easy pulikachal or puliogare mix (gojju) recipe. We just have to mix rice with this mixture and enjoy puliogare :)

Ingredients

Tamarind: Lemon sized ball (This is how my mom gives the measurement :D )
Fenugreek seeds (Methi): 1 tbsp
Bengal gram (Chana dal): 1/2 tbsp
Red chilies: 4
Red chili powder: 1/2 tsp
Turmeric powder: 1/2 tsp
Mustard seeds: 1/2 tsp
Salt: as per taste
Any cooking oil- 2-3 tsp
Gingelly oil: 1 tsp
Asafetida: a pinch
Curry leaves: few

Preparation method

  • Soak the tamarind in water and prepare a thick tamarind paste.
  • Roast the methi seeds and Chana dal and powder it.
  • Heat oil and do seasoning with mustard seeds, red chilies, asafetida and curry leaves.
  • Now add the tamarind paste.
  • Add turmeric powder, salt, powdered methi chana dal mixture and chili powder.
  • Allow it to boil.
  • Finally add curry leaves and remove it from the stove top.
  • Now add 1 tsp of gingelly oil.
  • Easy pulikachal / puliogare mix is ready.

We can also add peanuts to this recipe. Mix this with hot rice and serve with papadam / vadam :)

Kadalai Maavu Cake | Jiffy Mysore pak

Kadalai Maavu (Bengal gram flour) cake is a sweet prepared at my Aaji’s (granny) place for Deepavali :) This sweet reminds us of the mysore pak. Hence I have named it as “jiffy mysore pak” :D

Am sending this sweet recipe to Srivalli’s Mithai Mela.

Ingredients:

Kadalai Maavu:1 cup
Ghee: 1.5 cups
Sugar: 3 cups
Elachi (Cardamom) powder: 1/2 tsp

Preparation Method:

  • Roast the kadalai maavu till it turns slight brownish in color.
  • Add sugar and ghee with it and stir well.
  • Cook till the mixture turns frothy and ghee separates.
  • Now add Elachi powder.
  • Remove from the stove top and spread it on a greased plate.
  • Cut it into squares.
  • Kadalai maavu cake is ready

Maddur Vada | Maddur Vade

Maddur is small town in the Mandya district which lies between the cities Bangalore and Mysore. Maddur is famous for the snack “Maddur vada”. One cannot resist the smell of these yummy vadas :) I have always relished these vadas during my travel from Banglore to Mysore. Maddur vada can be prepared instantly unlike “Medhu vadai”/”Masala vadai”. We need not soak the dals / grind it. This is yet another jiffy snack recipe.

Maddur Vada | Maddur Vade

This simple and quick snack makes its way to EC’s WYF-Quick Meal event.

Ingredients:

Semolina (Rava): 1 cup
Rice flour: 1 cup
Maida / Wheat flour: 3/4 cup
Salt: to taste
Onion (Chopped): 1/2 cup
Red chilli powder: 1/2 tsp
Green chillies: 2-3
Curry leaves (Chopped): few
Coriander leaves (Chopped): few
Asafetida (hing): a pinch
Oil: to fry

Preparation Method:

  • Heat 3-4 tsps of oil.
  • Mix rava, rice flour and maida and salt.
  • Add onions, red chilli powder, green chillies, curry leaves, coriander leaves and hing to the mixture.
  • Make a dough adding oil and water.
  • Ensure that there are no lumps.
  • Take small amount of the dough and shape the vada by patting it on ur palm.
  • Sprinkle water on ur palm to avoid stickiness.
  • Deep fry the vadas.

Tip:

Some people shallow fry rava, rice flour and maida mixture before making the dough. Either way the Maddur vadas tastes gud!
